做法:
1茄子去蒂洗净,切成块状,用淡盐水浸泡10分钟,葱花、大蒜切碎,姜切末;
2热锅油热后放入茄子,小火慢煎至茄子微软后盛出;
3锅中倒油,放入蒜末和姜末爆香,下豆瓣酱煸炒出红油;
4将茄子放入炒匀,加料酒,白糖、生抽、倒入清水焖煮一会,调入辣椒油、花椒油,待汤汁收干,撒上葱花即可。

做法:
1。猪蹄洗净,姜蒜切片;
2。锅中烧水,放入葱姜片,倒入少许料酒,水开后放猪蹄飞水,撇除浮沫捞出猪蹄;

1。将鸡洗净后切成2-3cm的小块,加入料酒、盐拌匀,腌制20分钟;
2。姜、蒜切片,葱干辣椒切段;

1。冬瓜洗净后去皮,切成约2mm厚的薄片,大蒜、小葱分别切碎;

3。炒一汤匙红油豆瓣酱,小火,搅拌,炒到提起铲子油是红色的即可;
