1.称重准备好所有材料

2.鸡蛋分离。蛋白和蛋黄分开装在两个容器里,装蛋白的盆一定要干燥无油。

3.先来制作蛋黄糊。蛋黄打散后加入牛奶搅拌至蛋液与牛奶完全融合。

4.加入20克白糖搅拌均匀。

5.筛入低筋粉拌匀。这步快速轻柔拌至粉和蛋液融合无面粉颗粒即可,不可太大力以免起筋影响口感。

7.拌至油和面糊完全融合的油亮面糊备用。

8.现在我们开始打发蛋白,滴入几滴白醋到蛋白里帮助打发的哦,并分三次加入剩余的60克白砂糖。用电动打蛋器高速打至粗鱼眼泡时加入第一次糖。这步非常关键,大家一定要多一点耐心

14.预热电饭锅的同时,取出蛋黄糊加入三分之一打发好的蛋白拌匀。这步大家记得一定不能划圈拌以免蛋白消泡,只能用翻拌或者切拌的手法

15.再加入剩余的二分之一蛋白拌匀后,再倒入剩下的所有的蛋白同样用翻拌或者切拌的手法拌匀。

16.取出预热好的内胆(小心烫手)倒入拌好的蛋糕糊,并放台面轻摔震出大的气泡

17.放入电饭锅内,按下煮饭键。

18.等跳到保温键后用湿毛巾盖住上面的排气口,闷20分钟。大家可以第一次闷到时间后打开,用牙签插入取出,上面没有残留物就熟了,如果还没熟就再按一次煮饭键,跳到保温后再闷20分钟。我的3升电饭锅只按了一次煮饭键闷一次就熟透了。
