材料：
干辣椒800克、花生米20克、芝麻10克、姜30克、大葱90克、菜籽油3000克、香菜40克、八角10克、香果15克、草果15克、白芷3克、香叶4克、千里香5克、 香茅草4克、荜茇4克。

1.先把干辣椒剪成小段，锅里去水，然后把干辣椒倒入锅里小火炒至颜色变成深红色，待辣椒自然冷却后用石臼捣碎，芝麻和花生米也放锅里炒香捞出来。

2.把菜籽油倒入锅里烧到150度，把、姜、大葱、香菜、八角、香果、草果、白芷、香叶、千里香、 香茅草、荜茇倒入锅里，开小火炸至大葱成金黄色捞出所有残渣。
3.把芝麻、花生米和辣椒面倒入油缸里，把油一勺一勺的舀入辣椒面上面，边舀边搅拌，静置10个小时以上即可使用。
高汤秘方
材料：
猪骨1500克、老母鸡1500克、老姜50克、料酒50克、洋葱300克、香叶8克、八角15克、桂皮10克、胡椒10克、陈皮30克、干辣椒8克、白胡椒8克、草果15克。

1.把猪骨和老母鸡洗干净去除内脏，放入锅里加水将其淹没，锅里倒入少许料酒，大火烧开转小火煮10分钟去血水，然后捞出来洗干净。
2.高汤专用锅里加入30斤水，把老姜（拍破）、料酒、洋葱、香叶、八角、桂皮、胡椒、陈皮、干辣椒、白胡椒、草果放入锅里。
3.然后开大火烧开转小火煮4个小时，捞出所有渣料即成。

材料：
面条、空心菜、高汤、酱油、花椒粉、胡椒粉、辣椒油、蒜水、姜水、香油、味精、鸡精、油炸花生、葱花、芽菜、榨菜粒、猪油。
