陕西肉夹馍老大爷半辈子的秘方，学会了自己都可以开店
肉夹馍遍及西安大街小巷。咬一口外皮松脆，其内绵软的白吉馍。满嘴香醇可口的腊汁肉和白吉馍的诱人味道，不由你不满口生津，真是人生一小快乐。
原料：6人份，面粉300克，发酵粉20克，温水适量。
馍的做法：
1用温水化开发酵粉，倒入面粉中，用手和成软硬适中的面团。盖上布，醒40--50分钟。待面团完全膨胀。
2然后：切成6份每份再揉揉，压扁，擀圆，成这样。
3先烧热，不要放油。把饼饼放进去，用牙签扎9个小洞洞。两面都扎。盖上锅盖，注意不要烤焦，几分钟翻个面。已经可以闻到香味儿了。
4面饼还会膨胀一点儿，松松软软的很好看，当然很好吃了。

卤肉做法：
为了取得糜烂效果，用高压锅是最合适的。入味，够烂不塞牙~！
1选肉很重要，依地域口味而言，不可太多肥肉。，6肥4瘦为宜。
2切小件。加八角粉，一片桂皮。生抽多点不怕，少许白糖和盐。
3加水过肉。
4锅上气后小火焖25分钟。
5开盖后若水显多可敞盖在大火煮，煮到汤浓就OK。

西瓜皮卤肉：
原料：西瓜皮，五花肉，八角，酱油。
做法：
1五花肉洗净切块，西瓜切小段后去皮红肉部分可以多留一些待用。
2将西瓜皮、五花肉放入锅中，加适量水、八角、酱油，用中火炖30~40分钟，即成。
3然后把炖好的肉用刀切碎，浇上些卤肉汤。
4把煎好的馍中间用刀切开，不要切到底，留一点边连着。
5开始夹肉啦：把肉沫放进中间，好了。
